Carrot Cake

•2 cups sugar
•2 cups sifted flour
•2 t cinnamon
•2 t soda
•1 t salt
•1 1/2 cups Wesson oil
•4 eggs
•3 cups grated carrots
•Frosting ingredients (see bottom)

•Preheat oven to 350.
•Grease and flour tube or round cake pan.
•Combine first 5 ingredients.
•Add oil, then eggs.
•Fold in carrots.
•Pour into tube pan.
•Bake for 45-50 minutes (may take less for round cake pan)

Frosting:
•8 oz softened cream cheese
•1/3 stick butter
•Scant box confectioners sugar
•1/2 cup chopped pecans
•1/2 t vanilla

•Combine ingredients.
•Add a small amount of milk if necessary for proper consistency.
•Spread over cake.
